  1. Put the okra in a bowl  and wash thoroughly under cold water.
  2. Leave them to drain.
  3. Place them in a shallow bowl and sprinkle with vinegar.
  4. Add salt and mix.
  5. Spread okra in a clean towel and leave to dry.
  6. Meanwhile preheat the oven to 190 c.
  7. Place the okra in a tray and add the onion, the potato, garlic, cube vegetables, the tomato puree and chopped tomatoes.
  8. Add salt and pepper and drizzle with olive oil.
  9. Pour water and stir.
  10. Cover the baking tray with foil and place in oven for 1 1/2 hour or so.
  11. In one hour remove the foil and leave for another half hour in the oven.
  12. Serve okra hot.
