Serves 4



  1. Soak the cod in cold water overnight, changing the water as often as possible in the course of the evening and during the following day. The cod does not have to be skinned for this dish, but you should remove any obvious fins or bones.
  2. Preheat the oven to 180°Ο/350°F/Gas 4.
  3. Mix the potatoes, onion, garlic, rosemary and parsley in a large roasting pan.
  4. Grind in plenty of pepper.
  5. Add the olive oil and toss the mixture until well coated.
  6. Drain the cod and cut it into serving pieces.
  7. Arrange the pieces of cod between the coated vegetables and spread the tomatoes over the surface.
  8. Stir the tomato puree into the hot water until dissolved, then pour the mixture over the contents of the tin. Sprinkle the oregano on top.
  9. Bake for 1 hour, basting the fish and potatoes occasionally with the pan juices.
  10. Remove the roasting pan from the oven, sprinkle the olives on top, then cook it for 30 minutes more, adding a little more hot water if the mixture seems to be drying out.
  11. Garnish with fresh herbs. Serve hot or cold.

Salt Cod Facts

Salt cod has been a winter staple in Greece for generations.

It is particularly popular in the spring, and the following dish is often on the menu at city restaurants on Fridays during Lent.

The dried, creamy-coloured sides of cod, sparkling with salt flakes, can often be seen in the central market in Athens and on the stalls in many street markets.

Although it is an acquired taste, salt cod does have an exotic aura about it and, if you get a plump piece of good quality fish, it can be very appetizing.

Served with plenty of thickly sliced fresh bread, this dish makes a main course for four or a dinner party first course for six.

It can also be served cold, as part of the mezethes.

Where To Find Salt Cod

Salt cod can often be bought from Italian and Spanish groceries, as well as from Greek food stores. It is often sold in small squares, ready for soaking and draining.

If you buy it in one piece, cut it into 7cm squares after soaking.
