  1. Mix the olive oil with the lemon juice and garlic, in a shallow dish that will hold all the tuna steaks in a single layer.
  2. Stir in salt and pepper, then add the tuna steaks.
  3. Scatter over the herbs and turn the steaks to coat them in the marinade. Leave to marinate for 1 —2 hours.
  4. Lift the steaks out and lay them in a roasting pan.
  5. Preheat the oven to 180°C/350°F/Gas 4.
  6. Drop the cubes of potato into the marinating dish and turn them to coat them in the olive oil mixture.
  7. Arrange them around the tuna steaks, drizzle over any remaining marinade and sprinkle the chopped tomatoes on top.
  8. Pour the hot water into the roasting pan.
  9. Bake the tuna for 40 minutes, turning it over halfway through and stirring the potatoes.
  10. Transfer the tuna to a heated platter and cover it with foil to keep it warm.
  11. Increase the oven temperature to 200°C/400°F/Gas 6, add a little more hot water to the roasting pan if needed and cook the potatoes for about 15 minutes more to brown them and make them crisp.
  12. Serve the tuna and potato mixture with green salad, if you like.
