A delicious ground beef and vegetable soup utilizing the unique taste of sweet Trahana, a fine grain pasta made out of semolina and milk. If you are not able to get Trahana you could replace with a different fine grain pasta like orzo.
Dry the beef with paper-towels and then season with salt and pepper. Inside a pot, brown lightly the beef over high temperature . You may have to put the beef in two batches to ensure the cubes aren't going to be too crowded inside the pan.
Take out the beef into a plate and put 1/4 cup olive oil to pot. Over medium heat, saute the onions, mushrooms, carrots, and celery until soft 5 -10 mins.
Insert the wine and mix well, ensuring to scrape up every browned pieces from the bottom of the pot.
Put back the beef to the pot, add the water and beef broth and bring to a boil. When boiling, put the Trahana or orzo and stir well . Reduce heat to a simmer, cover up and simmer for approximately 1 hour, stirring from time to time to make sure the grains will not stick to the bottom part of the pan.
Melt the tomato paste in a cup of water and add to the pan. Mix in the chopped parsley and adjust the salt and pepper to taste.
