FISH SOUP (With Fresh Coriander)


 For 6 people

Greek Fish Soup	6 slices of fish (snapper,sword       fish,salmon or monk fish).
• 2 large onions, grated.
• 2 cloves garlic chopped.
• 1 tea cup chopped fresh       coriander.
• 1 tin of chopped tomatoes.
• 2 tbs tomato paste .
• 1 tea cup olive oil .
• 1 tbs cumin .
• 1 tbs of lemon zest .
• salt, pepper.


Prepare the sauce.

  1. In a large saucepan, pour the olive oil and sauté the onion and garlic.
  2. Stir in cumin, lots of black pepper and grated lemon zest.
  3. Add the tomato juice and tomato paste dissolved in a little water.
  4. Add salt and pepper.
  5. Allow to boil and cook over medium heat for 10 minutes.
  6. Put 1/2 cup chopped coriander and continue cooking for another 10 minutes.
  7. Put the slices of fish and cook for 10 minutes.
  8. Take the pan off the heat and add the remaining coriander.
  9. Stir gently to avoid breaking the fish slices.
  10. Serve on a large platter  with boiled white rice

Note. If you don’t like coriander replace it with an equal amount of chopped fresh parsley.

The result will be equally good.
