(Fasolakia me tomata)

Serves 4



This is one of the standard summer dishes in Greece and is made with different kinds of fresh beans according to what is available. When the beans are tender and the tomatoes sweet, the dish, although frugal, can have an astoundingly good flavor. It is usually accompanied by feta cheese and fresh bread.

  1. Heat the olive oil in a large pan, add the onion and saute until translucent.
  2. Add the garlic, then, when it becomes aromatic, stir in the potatoes and saute the mixture for a few minutes.
  3. Add the tomatoes, with the hot water and cook for 5 minutes.
  4. Drain the beans, rinse them and drain again, then add them to the pan with a little salt and pepper to season.
  5. Cover and simmer for 30 minutes.
  6. Stir in the chopped parsley, with a little more hot water if the mixture looks dry.
  7. Cook for 10 minutes
