NNutmegutmeg can be used in both savoury and sweet dishes to lift them and add a note of sweetness. It can lift a dish with just a pinch.

Use nutmeg to liven up custards, rice pudding, pound cakes, pancake batter, egg nog and mulled wine. Sprinkle it on top of desserts like cheesecake or add it to the flavouring during cooking or baking.

It goes especially well with chocolate so you can add a hint to melted chocolate when you are making a chocolate cake or mousse.

You can also use dried nutmeg in recipes but be careful not to add too much as it can be toxic when taken in large quantities and it's a very strong spice which will overpower other flavours.

A nutmeg grater should be a part of basic equipment in every kitchen, but if you do not have one, use the finest blade on a larger hand-held manual grater.

The difference between fresh grated nutmeg and commercially-ground is like night and day.
