  1. Discard any mussels whose shells are open or broken.
  2. Rub those with closed shells with a stiff brush and cut their "beards".
  3. Wash them well under running water and drain them.
  4. Put them it pot with a little water and steam until the shells open.
  5. Heat half the oil in a frying pan steam until the sells open.
  6. Heat half the oil in a frying pan αnd saute the onions lightly.
  7. Add the rice and saute together for 1-2 minutes.
  8. Pour in a cup of the liquid in which the mussels were steamed (add water if it is less than one cup), and add the salt pepper, raisins and pine nuts.
  9. Boil the mixture for 5 minutes.
  10. Fill the mussels with the stuffing and put them into a pot with the rest oil and 1 1/2 cup of hot water.
  11. Cook over low heat until the rice is tender.

Variation: Add finely chopped parsley and mint to the filling.
