Makes 2 loaves



  1. Dissolve yeast in milk in a large bowl. Stir in 2 cups (280 grams) of the flour and ½ cup (100 grams) of the sugar, cover bowl with plastic wrap, and set aside for 1 hour.
  2. Add the butter and eggs to the dough and mix thoroughly.
  3. Sift 6 cups of the flour, salt, and remaining sugar into mixture.
  4. Add mahlab, orange and lemon zest, and mix thoroughly.
  5. Turn out dough onto a floured surface.
  6. Knead for about 10 minutes until smooth, adding more flour if needed, then form into a ball and place in a lightly greased bowl.
  7. Cover with a clean dishtowel and set aside to rise for 1 ½ to 2 hours.
  8. Place the dough on a floured work surface.
  9. Divide into 6 equal sections, rolling each section into ropes about 15" long.
  10. For each loaf, braid 3 ropes.
  11. Set bread aside to rise again for 1 hour on a greased baking sheet.
  12. Preheat oven to 350˚. Brush bread with beaten egg , and bake until golden, 40–50 minutes
